This invention relates to novel ascorbic acid derivatives represented by formula (I), in which R1 and R2, which are different, represent a hydrogen atom or (CH2CH2O)nCH2CH2OR3 (wherein, n is an integer of 1 to 399; R3 is a lower alkyl group which may have 1 to 10 carbon atoms), and their preparation thereof. Furthermore, this invention relates to the novel ascorbic acid derivatives that have high stability, anti-oxidative effect over a long period, and especially good solubility in both water and most organic solvents. The field to which this invention is applied includes feeds, foods, cosmetics, and pharmaceuticals. |
