PURPOSE: To obtain the aimed preservative showing strongly antimicrobial action, having excellent preserving effects even with a small amount added without damaging taste, flavor, etc., of food, comprising an emulsifying agent for food, amino acid, alcohol, organic acid and ε-polylysine. n CONSTITUTION: The aimed preservative comprising (A) an emulsifying agent for foods, (B) an amino acid, (C) an alcohol, (D) one or more of an organic acid and a salt thereof and (E) ε-polylysine. The component E is prepared by cultivating a bacterium (e.g. Streptomyces albulus) belonging to the genus Streptomyces and separating from the culture mixture and the amount of the component E added is preferably 0.001-0.02wt.%. n COPYRIGHT: (C)1990,JPO&Japio |
