abstract PURPOSE: To obtain the aimed preservative showing strongly antimicrobial action, having excellent preserving effects even with a small amount added without damaging taste, flavor, etc., of food, comprising an emulsifying agent for food, amino acid, alcohol, organic acid and ε-polylysine. n CONSTITUTION: The aimed preservative comprising (A) an emulsifying agent for foods, (B) an amino acid, (C) an alcohol, (D) one or more of an organic acid and a salt thereof and (E) ε-polylysine.
