abstract PROBLEM TO BE SOLVED: To provide a novel sweetener, a method for producing the same, and use thereof, which overcomes the risk of illness caused by intake of isomerized sugar, and defects in the production process or taste quality of rare sugar-containing syrup. An acid and / or enzyme is allowed to act on sugar under specific conditions to efficiently decompose it into glucose and fructose, and then isomerized using alkali and / or enzyme under specific conditions. The isomerization product contains D-psicose mainly as a rare sugar so that sugar, D-glucose, D-fructose, and a rare sugar containing at least D-psicose are included in a specific composition ratio. Or a method for producing a sweetener composition, wherein a rare sugar containing D-glucose, D-fructose, and at least D-psicose is contained in a specific composition ratio. [Selection] Figure 1
