A crystalline fructose made from sugarcane bisucrose having particles consisting of crystallites having a narrow size distribution with an average diameter of 250 microns to 350 microns. The production process involves chemical conversion of sucrose by acid hydrolysis, chromatographic separation of fructose from glucose, preparation of a syrup rich in fructose, crystallization of fructose from aqueous alcoholic media, and centrifugation. It consists of recovery, washing and drying of the crystals. |
