PROBLEM TO BE SOLVED: To provide a method capable of producing a lactic acid fermented food containing a large amount of γ-aminobutyric acid by utilizing natural glutamic acid contained in food. Means Two kinds of lactic acid bacteria, Lactobacillus bulgaricus and Streptococcus thermophilus, are inoculated in a medium containing skim milk and tomato juice, the lactic acid bacteria are mixed and cultured, and the skim milk is subjected to lactic acid fermentation to obtain fermented milk. . |
