abstract The invention relates to a process for continuous heat treatment, in particular for pasteurization, sterilization, bleaching with or without subsequent cooling. bulk, naked, prepackaged or packaged products, such as plants, meat, poultry or other food products. This process is characterized in that a sealed treatment box is used and the walls of this box are brought to a temperature higher than that to be achieved on the products, the products are introduced into the box in which one makes the vacuum, then this vacuum is broken by adding steam, the pressure of which is regulated until the temperature necessary for treating the product is obtained. This process is applicable to the heat treatment and the packaging of vegetables, fruits, poultry. of meat, packaged or not.
