abstract 814,524. Storing hot foods. LAZIGNAC, G. M. Aug. 31, 1955, No. 24983/55. Class 49. Hot foods are stored and preserved under a pressure of 9 to 12 pounds per square inch and heated, e.g. intermittently by infra-red radiations, to keep the foods between predetermined limits of temperature, and any substantial reduction of their water content is prevented. The apparatus employed may comprise a compartment bounded by a double-walled 10, 12 cylinder and a hinged door 8, and provided with a drawer 15 to take the products to be treated, infra-red radiation tubes 18 and a vacuum pump 61; vapour carried out of the compartment through the vent 19 when vacuum is applied by the pump condenses as drops on the unheated wall 12 and when suction stops these are carried back by air currents in the reverse direction.
