The invention discloses an exoinulinase mutant MutP126Q with reduced thermal stability, the mutant MutP126Q has an amino acid sequence as shown in SEQ ID NO.1. The mutant enzyme MutP126Q was more susceptible to heat denaturation than the wild-type enzyme InuAMN8. After treatment at 55℃ for 20–60min, the enzyme activity of the purified wild enzyme InuAMN8 decreased from 50% to 17%, while that of the mutant enzyme MutP126Q decreased from 39% to 10%, and the difference between the two was always about 10%. . The exoinulinase mutant MutP126Q with reduced thermal stability of the present invention can be applied to industries such as food, winemaking and medicine. |
