The invention relates to the technical field of genetic engineering and protein transformation, in particular to a highly active low-temperature exoinulinase mutant MutAP122EK5 and application thereof. The amino acid sequence of the mutant MutAP122EK5 is the first of wild exoinulinase InuAMN8 AAPLP from positions 122 to 126 was replaced with 5 amino acids of EEDRK, and the sequence of MutAP122EK5 is shown in SEQ ID NO.1. Compared with the wild enzyme InuAMN8, the low temperature activity of the mutant enzyme MutAP122EK5 is improved, and the thermal stability is reduced, which is beneficial to be applied in the field of biotechnology under the requirement of low temperature environment. The low-temperature exoinulinase mutant MutAP122EK5 of the invention can be applied to industries such as food, winemaking and washing. |
