The inventors have developed a process that enables the isolation of a valuable flavor compound from an effluent stream resulting from the manufacture of pea protein isolates. Pea protein isolates are produced by a process comprising the following steps: (i) preparing a pea mash, (ii) removing starch and fiber, and (iii) removing protein (globulins). The aqueous effluent stream obtained after the removal of starch, fibers and globulins is commonly referred to as "pea whey". Pea whey contains a variety of components including free amino acids, sugars, organic acids, nucleotide monophosphates, galactooligosaccharides, polysaccharides, peptides, proteins (e.g. albumins) and minerals. |
