Pea isolate comprising, on a dry matter basis: a. 0-10% by weight pea components with a molecular weight of at least 30 kDa; b. 0-70% by weight galactooligosaccharides selected from raffinose, stachyose, verbascose and combinations thereof; c. 0.05-20% by weight 5'-inosine monophosphate (IMP); d. 0-4% by weight 5'-adenosine monophosphate (AMP); the weight ratio IMP: AMP being greater than 1: 1. |
