An active biocatalyst for converting alpha-pinene epoxide to terpenic aldehydes useful in perfumery, e.g. formula (I), is produced by growing a microorganism, preferably Pseudomonas fluorescens NCIB 40043, to late log phase in a medium containing carbohydrate (e.g. glucose) as the carbon source, and adding alpha-pinene. The resulting culture comprises active biocatalyst which is brought into contact with alpha-pinene epoxide for aldehyde synthesis. |
