abstract The invention relates to a beverage containing an amino acid and a carbohydrate, the pH value of the beverage being greater than or equal to 3.5 and less than or equal to 4, and the total content of citric acid and of citric acid salt being less than or equal to 0.9% by weight in terms of free citric acid. Alternatively, the invention relates to a beverage containing an amino acid and a carbohydrate, the pH value of the beverage being greater than or equal to 4 and the total content of citric acid and citric acid salt being less than or equal to 1 74% by weight in terms of free citric acid. Thus, coloring due to browning can be avoided in amino acid and carbohydrate-containing beverages such that beverages with improved preservative properties and excellent qualities are provided.
