abstract Provided is a method for removing fermentation inhibitors and efficiently producing organic acid by a safe, simple method. A method for producing organic acid including the following steps (a)-(d). (a): Step for crushing a lignocellulose biomass containing cellulose having a cellulose I degree of crystallization shown by calculation formula (1) exceeding 30% and decreasing the cellulose I degree of crystallization to 0-30%. Degree of crystallization (%) = [(I c - I a )/I c ] × 100 (1) [I c represents the diffracted intensity of the lattice plane (002) (lattice spacing = 22.4 nm) in x-ray diffraction and I a represents the diffracted intensity of the amorphous portion (lattice spacing = 27.3 nm)]. (b): Step for washing the crushed product obtained in step (a) by water. (c): Step for obtaining a saccharified product from the solid obtained in step (b) using hydrolase. (d): Step for fermenting the saccharified product obtained in step (c) by filamentous fungi and obtaining organic acid.
