Disclosed is an oil or fat containing a highly unsaturated fatty acid, which has a lower saturated fatty acid content.nSpecifically disclosed is a method for reducing the content of a saturated fatty acid, which is characterized by carrying out a lipase reaction at a temperature of 25˚C or lower in a method for concentrating a highly unsaturated fatty acid by reacting a glyceride containing the highly unsaturated fatty acid with a lipase having a low reactivity to the highly unsaturated fatty acid. The lipase is preferably derived from a microorganism belonging to the genus Candida , Alcaligenes , Burkholderia , Pseudomonas , Thermomyces or Rhizomucor . Also disclosed is a glyceride produced by the method and having a docosahexaenoic acid content of 40% by area or more and a saturated fatty acid content of 12% by area or less. |
