Disclosed is a method whereby β-1,3-glucan, in which several tens of glucose molecules are polymerized, can be easily manufactured. Manufacture is achieved with a polymerization reaction using β-1,3-glucan phosphorylase from Ochramonas sp. in a glucose-1-phosphoric acid matrix. It is preferable here that the species of Ochramonas is Ochramonas danica, that the pH during the polymerization reaction is pH 4‑8, and that the temperature is 20‑50°C. It is also preferable that the β-1,3-glucan phosphorylase is extracted from Ochramonas sp. cells, and has sufficient crude refinement that it is not necessary to add a laminin oligosaccharide as a primer when manufacturing β-1,3-glucan. |
