abstract |
The problem is to provide a method of inhibiting coloring of a syrup-like sweetener containing a non-reducing oligosaccharide having a β-fructofuranoside bond and a reducing sugar without causing said syrup-like sweetener to lose its original flavor, and by means of said method to improve the stability of the syrup-like sweetener containing a non-reducing oligosaccharide having a β-fructofuranoside bond and a reducing sugar. The aforementioned problem is solved by providing a method of inhibiting coloring of a syrup-like sweetener containing a non-reducing oligosaccharide having a β-fructofuranoside bond and a reducing sugar with which a lactic acid salt is included in the syrup-like sweetener containing a non-reducing oligosaccharide having a β-fructofuranoside bond and a reducing sugar, and by providing a syrup-like sweetener containing a non-reducing oligosaccharide having a β-fructofuranoside bond and a reducing sugar that has been stabilized by said method. |
