titleOfInvention Method for production of processed tea
abstract The object is to produce a processed tea from which an unpolymerized catechin can be eluted with water at a high concentration, and which is reduced in bitter taste and astringent taste and therefore has good flavor. Disclosed is a method for producing a processed tea, which is characterized by comprising the step of mixing (A) a granule of a purified product of a green tea extract with (B) a tea leaf at a solid content ratio (i.e., a [(A)/(B)] ratio) of 10/90 to 90/10 by mass, wherein the purified product is produced by dissolving the green tea extract in a mixed solution prepared by mixing ethanol with water at a ratio of 99/1 to 75/25 by mass and extracting the green tea extract with the mixed solution.
