abstract Disclosed is a method for collecting an L-biphenylalanine compound salt (2'), which comprises the steps of: hydrolyzing a biphenylalanine ester compound (1) with a protease derived from a microorganism belonging to the genus Bacillus in a mixed solvent of an organic solvent and water at a pH value ranging from 6 to 13 to produce the L-biphenylalanine compound salt (2'); separating an aqueous layer containing the L-biphenylalanine compound salt (2') from an organic layer containing unreacted D-biphenylalanine ester compound (3); and adding an inorganic salt and an organic solvent to the aqueous layer to extract the L-biphenylalanine compound salt (2') from the aqueous layer.
