abstract |
It is intended to provide a dipeptide-digesting enzyme which acts on a dipeptide and digests it into amino acids. It is also intended to provide a novel assay method which makes it possible to quickly, conveniently and accurately assay a glycated protein, a glycated peptide or a glycated dipeptide by treating a glycated dipeptide with the above-described enzyme to form a glycated amino acid and an amino acid and then quantifying the amino acid. Namely, a dipeptide-digesting enzyme which acts on a dipeptide and thus forms amino acids. The dipeptide-digesting enzyme as described above wherein the dipeptide is a glycated dipeptide and a glycated amino acid and an amino acid are thus formed. A method of forming a glycated amino acid and an amino acid which comprises treating a specimen containing a glycated protein or a glycated peptide with a protease and a dipeptide-digesting enzyme. A method of assaying a glycated protein, a glycated peptide or a glycated dipeptide which comprises quantifying the amino acid formed by the above-described method by adding a substance capable of digesting the amino acid thereto. |
