The invention relates to powdery preparations that comprise a) sterols and/or stanols and/or the esters thereof and b) natural macromolecular colloid-forming agents selected from the group including gum arabic, gelatin, tragacanth, alginates, carrageen, guar gum and xanthene, in a weight ratio of a) to b) of 10:90 to 80:20. These powdery preparations allow a processing of the hydrophobic sterols and/or stanols without complication due the improved dispersing behavior in food, they have a good storage stability and are free from taste. The preferred natural macromolecular colloid is gum arabic. |
