A food containing Ϝ-glutamylcysteine or cysteine is produced by culturing under appropriate conditions Candida utilis containing 1% by weight or more of Ϝ-glutamylcysteine based on dry cells in the logarithmic growth phase when cultured in the minimum medium (for example, Candida utilis carrying a gene encoding glutathione synthase which has been modified so as to lower the glutathione synthase activity in the cells), adding the thus obtained culture or a fraction thereof optionally after heating to a food or drink material, and then processing. |
