abstract PURPOSE: To collect glutathione in high yield, by preparing a variant strain of Candida utilis, growable in the presence of ethionine and a sulfite, and capable of producing a remarkable amount of the glutathione among the variant strain on the Candida utilis. n CONSTITUTION: A cultivated microbial cell of Candida utilis is sujected to mutation with irradiation with X rays and treatment with nitrosoguanidine, and the resultant variant strain is cultivated in a culture medium containing ethionine and a sulfite respectively in the minimum inhibition concentrations or above to separate the grown microorganisms and obtain the aimed strain capable of producing the maximum amount of glutathione. Examples of the variant strain are Candida utilis KJS-0571, FERM-P No.6907 and Candida utilis KJS-0582, FERM-P No.7396.
