abstract A disposable cutting sheet for cutting and preparation of food items thereon includes a first section having a plurality of apertures therethrough and a cut resistant surface, a second liquid impermeable section disposed adjacent the first section, and a fold line disposed between the first section and the second section, wherein folding along the fold line forms the cutting sheet. The cutting sheet further includes an absorbent material, wherein the first and second sections are folded along the fold line and moved relative to one another to form a pocket therebetween such that the absorbent material is disposed in the pocket between the first and second sections. One of a surface of the first section that faces the absorbent material in a folded position and a surface of the second section that faces the absorbent material in a folded position is roughened or textured in order to prevent slippage of the absorbent material within the sheet when folded.
