abstract The invention relates to a method for the production of erythritol, in which erythrose is reduced to erythritol using a NADPH-specific enzyme, wherein the enzyme is an erythrose reductase which was isolated from the group of saprophytes selected from the strains of Hypocrea, Gibberella, Aspergillus and Penicillium. Hereby it is possible to produce erythritol in high yields.
