abstract | FIELD: dairy industry.SUBSTANCE: invention relates to dairy industry and can be used for rapid determination of cow milk falsification with vegetable fats. Method comprises cooling test tube with the sample of milk in amount of 10–15 cm3to temperature of 4–15 °C, shaken chilled milk sample for 5 minutes, heating a test tube with a milk sample in a water bath or under a stream of hot water to temperature of 40–50 °C, pouring milk sample from test tube into petri dish, placing it in the center of the luminoscope viewing chamber, irradiating with ultraviolet light, observing luminescence of fat on the surface of the milk sample, determining by the color of the fat luminescence on the milk sample surface presence or absence of vegetable fat in it.EFFECT: higher reliability of determining presence or absence of vegetable fats in cow milk due to direct observation of color of luminescence of free fat released on milk surface.1 cl, 2 ex |
