abstract | FIELD: biochemistry. n SUBSTANCE: invention relates to biochemistry. Disclosed is method of detecting presence of heat-resistant microorganisms in food product and method of detecting presence in food product of heat-resistant microorganisms and total amount of microorganisms for their comparison. In one version, method involves placing aliquots product in vessel having optical probe which is sensitive to metabolite of heat-resistant microorganisms, pasteurisation of aliquots in vessel, incubation pasteurised aliquots in vessel and intermittent access to probe during period of incubation. In another version, method involves sampling product, placing first sample aliquots in first vessel, containing first probe which is sensitive to metabolite of heat-resistant microorganisms, placing second sample aliquots in second vessel having second probe, sensitive to analyte target, pasteurisation of first aliquots, incubation of pasteurised first aliquots and second aliquots and intermittent access to both probes for period of incubation. At that, during such accesses heat-resistant microorganisms metabolite concentration change is measured in aliquots in probe. n EFFECT: invention provides improved method of detecting and counting heat-resistant microorganisms ensured by performing minimum number of operations with samples. n 40 cl, 3 dwg |
