abstract | FIELD: food industry. n SUBSTANCE: invention relates to the use of D-psicose in frozen beverages of zero or low caloric value. Frozen beverage containing rebaudioside M and D-psicose in an amount of 1 to 10 % by weight of the total weight of the frozen beverage is proposed. In this case, the frozen beverage is a zero, low or reduced calorie beverage and has a total Brix value of at least 6.6 %. Method for producing a frozen carbonated beverage of zero, low or reduced caloric content comprises combining rebaudioside M and D-psicose to prepare a syrup for a frozen carbonated beverage of zero, low or reduced calorie content, loading of syrup for the dispenser for frozen carbonated beverages and filling a frozen carbonated drink with zero, low or reduced caloric content from a dispenser for frozen carbonated beverages. n EFFECT: invention makes it possible to obtain a beverage with zero or low calorie content with improved characteristics, namely, voluminousness and an elevated Brix degree. n 13 cl, 3 ex |
