titleOfInvention | Method of sugar-containing product production |
abstract | FIELD: food industry. n SUBSTANCE: invention relates to sugar industry. Method for producing a sugar-containing product involves applying a liquid biologically active additive that does not contain sucrose to sugar crystals and drying in two tumble dryers. Moreover, the sugar is pre-fractionated with the separation of 0.5–1.0 mm crystals from it to apply an extract from the ginseng root in an amount of 1.0–2.5 % by weight thereof using a nozzle installed inside the drum of the first dryer. At the same time, the deposition process is carried out on the sugar crystals, which are in a suspended state. After that, the sugar crystals are sent to a second drum dryer and dried to a moisture content of 1.0–1.5 %. Then, a solution of isomalt with a concentration of 70–80 % of dry matter in an amount of 0.2–0.8 % by weight of sugar is applied to their surface through the nozzle and adjusted to a moisture content of 0.2–0.7 %. n EFFECT: invention makes it possible to provide more uniform conditions for applying a liquid biologically active additive to sugar crystals, improve its physiological composition and strengthen it more firmly on the surface of the crystals by treating with isomalt solution. n 1 cl, 2 ex |
