abstract | The present invention relates to a method of milling rice having an increased GABA content and rice milled thereby. A method of polishing rice with an increased GABA content according to an embodiment of the present invention includes a pretreatment step of washing the rice with a pretreatment composition; A drying step of drying the pre-treated rice; a reduced milling step in which the rice that has undergone the drying step is put into a mill, and the rotation speed of the mill is reduced to 100 rpm to 250 rpm to be milled; an accelerated milling step in which the rice that has undergone the drying step is put into a mill, and the rotation speed of the mill is accelerated to 400 rpm to 1000 rpm to be milled; and an iterative refinement step of selectively repeating any one or more of the deceleration refining step and the acceleration refining step. |
