The present invention relates to a method for producing a low calorie brown rice, comprising the step of selecting brown rice (S110); Air cleaning the selected brown rice (S120); (S 130) drying and sterilizing the washed brown rice in the air washing step; Preparing a germinated grain fermented complex active enzyme solution (S140); A step S150 of inoculating the germinated cereal fermenting complex active enzyme solution into the dried and sterilized brown rice; A moisture control step (S160) for adjusting the total moisture content of the brown rice to 15 to 15.5%; (S170) sealing and packaging the brown rice inoculated and moisture-adjusted with the germinated cereal fermentation complex active enzyme solution (S170). According to this method, a brown rice having a low calorie can be obtained. |
