abstract The present invention consists of 40 to 50 parts by weight of mung beans, 50 to 55 parts by weight of sugars, 0.4 to 0.8 parts by weight of starch, and 0.5 to 1.0 parts by weight of sun salt. The subsidiary material relates to a mung bean paste composition comprising 0.01 to 0.1 parts by weight of powdered milk or egg protein, 0.01 to 0.1 parts by weight of gum, 0.1 to 0.5 parts by weight of acidulant, and 0.1 to 0.5 parts by weight of dietary fiber, and a manufacturing method thereof. Mung bean of the present invention is inactivated lipoxygenase has no unpleasant taste or smell, can be combined with mung bean sediment composition such as sugars and salts can provide excellent mung bean sediment.
