abstract |
The present invention provides a method for preparing fermented red ginseng with enriched compound K comprising: (a) a step for making red ginseng come in contact with mixed enzymes including pectinase, cellulase, hemicellulase, and beta-glucosidase; (b) a step for inoculating lactic acid bacteria into the product from step (a); and (c) a step for converting ginsenoside contained in the red ginseng into compound K by culturing the lactic acid bacteria. The present invention proposes an optimum condition in converting the ginsenoside contained in red ginseng. According to the present invention, the fermented red ginseng with enriched compound K having useful effects can be provided. Additionally, the fermented red ginseng with enriched compound K can enhance the adsorption of the ginsenoside in the body compared to unfermented red ginseng regardless of the individual ability to metabolize ginsenoside. |
