abstract |
PURPOSE: A black garlic beverage and a producing method thereof are provided to offer the improved functionality of the beverage to users by using proper additional ingredients. CONSTITUTION: A producing method of a black garlic beverage comprises the following steps: mixing 0.01-30wt% of cinnamon or roasted garlic with black garlic; extracting the mixture at 50-95 deg C for 3-30 hours using hot water, and aging the obtained extract at 0-5 deg C for 3-20 days; and filtering the aged extract. |
