The present invention relates to an amylase in which a sequence of heat-resistant amylases isolated from Pyrococcus furiosus is changed by a specific positional shift method, and more particularly, by changing an amino acid at a specific position. Compared to amylase, the ring opening rate of cyclodextrins is significantly higher than that of chain malto oligosaccharides, especially maltoheptaose (G7), and a method for producing a chain malto oligosaccharide using the same. |
