The present invention relates to a block-type lyophilized snack and a method of manufacturing the same, from at least one or more raw materials selected from fruits, vegetables, bulbs, seaweeds, seafood, meat, eggs, dairy products, soybeans, soybean processed products, and soybean fermented foods. The resulting lyophilizate in its original, sliced or chopped form is dispersed therein, and the lyophilisate of the cooked dough, including whole milk powder, glutinous rice flour, honey and dextrin, and the lyophilisate of yogurt form blocks to taste. It is intended to provide a block-type lyophilized snack which is useful as an emergency food, snack or patient food as it has excellent chewing feeling and preserves nutrients, and improves robustness. |
