abstract |
The present invention relates to a binder, wherein the cereal and the binder together form a cereal matrix and are heated for a temperature and time that reduces the water activity at the outer portion of the cereal matrix while maintaining the inner portion of the cereal matrix at a higher second water activity. A method of making a cereal bar consisting of a cereal mixture comprising ready-to-eat cereal pieces coupled together. The method of the present invention provides reduced density cereal bars with improved shelf life and chewability that require less compressive force to form into cohesive self-supporting structures. |
