titleOfInvention Preperation method of Vitamin D enhanced Shiitake mushrooms by Ultraviolet light B irradiation
abstract The present invention relates to a method for producing shiitake mushrooms by increasing the content of vitamin D 2 by irradiating the shiitake mushrooms with ultraviolet rays, and irradiating ultraviolet B waves 0 to 10 J / ㎠ inside the fruiting body of shiitake mushrooms according to the irradiation dose. The content can be increased up to 8 times, and dried shiitake mushrooms with vitamin D₂ can be obtained more efficiently than ordinary shiitake mushrooms produced by sun-dried or hot-air dried by performing hot air drying and irradiation with ultraviolet B waves. Way.n n n More specifically, the vitamin D₂ content is 21.51, 120.78, 144.38, 168.08, and 187.69 ㎍ / g with UV B wave irradiation at 0, 2.5, 5, 7.5, and 10.0 J / ㎠, respectively. (p <0.05). The vitamin D₂ content in shiitake mushrooms according to the ultraviolet B wave irradiation site (inside and outside of the fruiting body) may be increased when the ultraviolet B wave is irradiated inside the mushroom fruiting body. The vitamin D₂ content in mushrooms changes according to the hot air drying time, and the vitamin D₂ content decreases significantly as the hot air drying time increases. It is manufactured by the hot air drying method, which does not produce vitamin D₂ when UV B wave irradiation is applied during hot air drying. It is possible to prepare highly functional dried shiitake mushrooms with much higher vitamin D2 content than normal shiitake mushrooms or sun-dried shiitake mushrooms.
