abstract | The present invention relates to a composition having increased antiinflammatory or antioxidant activity including steamed and fermented Gujunae extract and a process for producing the same. More particularly, the present invention relates to a composition having increased anti-inflammatory or antioxidative activity through the change of indicator substances by inoculating and fermenting microorganisms in a cooked gugija extract and a method for producing the same. In the present invention, it was confirmed that the betaine and the rutin, which are indicator substances, were significantly increased in the case of the extract fermented by boiled gugija. Further, by confirming the enhancement of anti-inflammatory or antioxidative function, It is expected to be widely used as a functional material for antioxidation. |
