abstract PURPOSE: To obtain the title preparation containing iron-bonding peptide as an active ingredient. n CONSTITUTION: An iron preparation causing no oxidation of lipids and no deterioration of vitamin A is produced by using, as an active ingredient, an iron- bonding peptide such as hydrolysate of iron-bonding protein, iron-bonding soybean protein or iron-bonding albumen. The iron-bonding peptide is obtained by mixing protein such as milk or soybean protein with an iron salt aqueous solution so that the protein becomes 0.5W30% to form iron-bonding protein, sterilizing the product, when necessary, and hydrolyzing it with a protease (one or more of protease active at neutral or alkaline conditions), centrifuging the hydrolysate, and concentrating and drying, when needed.
