abstract PURPOSE: To obtain the titled product wherein a bacterium belonging to the genus Bifidobacterium is slightly destroyed even by long-period preservation, by adding food fibers to a raw material for fermanted milk, inoculating a bacterium belinging to the genus Bifidobacterium (and lactic acid bacteria) into the raw material, cultivating it. n CONSTITUTION: A raw material such as milk and/or dairy products for preparing a fermented dairy product is blended with ≤1wt%, preferably 0.2W1wt% food fibers, and the prepared blend is sterilized. A bacterium belonging to the genus Bifidobacterium or the mold and lactic acid bacteria are inoculated into the blend, and cultivated. Even if the fermented diary product is preserved, the bacterium belonging to the genus Bifidobacterium will not be destroyed, to give a fermented dairy product having high survival ratio. n COPYRIGHT: (C)1985,JPO&Japio
