| abstract | PURPOSE: To obtain the titled product wherein a bacterium belonging to the genus Bifidobacterium is slightly destroyed even by long-period preservation, by adding food fibers to a raw material for fermanted milk, inoculating a bacterium belinging to the genus Bifidobacterium (and lactic acid bacteria) into the raw material, cultivating it. n CONSTITUTION: A raw material such as milk and/or dairy products for preparing a fermented dairy product is blended with ≤1wt%, preferably 0.2W1wt% food fibers, and the prepared blend is sterilized. A bacterium belonging to the genus Bifidobacterium or the mold and lactic acid bacteria are inoculated into the blend, and cultivated.
