abstract (57) [Summary] [PROBLEMS] To provide a method for continuously and efficiently producing alcoholic beverages containing high-concentration alcohol such as sake. SOLUTION: (1) A step of preparing immobilized Aspergillus oryzae using a liquefied liquid obtained by allowing α-amylase and protease to act on cereals and / or a filtrate thereof, and (2) a step of allowing α-amylase to act on cereals. Contacting the immobilized koji mold of step (1) with the obtained liquefied liquid to obtain an extract containing a saccharifying enzyme; (3) A method for producing alcoholic beverages, wherein each step of alcohol fermentation by inoculating the extract obtained in step (2) with immobilized yeast is repeated to carry out parallel double fermentation.
