abstract (57) [Summary] (Modified) [Purpose] To provide a hydantoin derivative exhibiting excellent Maillard reaction inhibitory action. [Structure] A hydantoin derivative represented by the following formula or a salt thereof, and a Maillard reaction inhibitor containing these as active ingredients. [Wherein W is H, -NH 2 ; X is H, a halogen atom, C 1-6 alkyl group, C 1-6 alkoxy group; Y is O, S; Z is H, —NHRCR is H, C 1-6 acyl group, -COCF 3, -COOR 1 (R 1 is C 1-6 alkyl group), - COCH (NH 2) - (CH 2) n -CH 3 (n is an integer of 0-2), except when W = Z = H] [Effect] It has a high Maillard reaction inhibitory activity and low toxicity, and therefore requires diabetic complications for a long period of time. It is useful as a preventive / therapeutic drug for various diseases associated with aging and arteriosclerosis.
