(57) [Summary] [Purpose] Heavy metals such as cadmium, which is a harmful substance, are removed from the midgut glands of scallops, which is one of the processing residues of fish and shellfish, and fish and shellfish containing harmful metals are used as resources. It is possible to expand the use and control pollution sources. According to a first aspect of the present invention, a chelating agent is added to a fish and shellfish amino acid solution having a pH adjusted to 8 to 9 to cause it to act, and the chelating agent adsorbs heavy metals contained in the fish and shellfish amino acid solution.
