abstract PURPOSE: To provide a dressing composed of an aqueous phase and an oil phase, containing a specific amount of a diglyceride in the oil phase, having stable quality and taste, giving thick and heavy feeling to the palate and useful in the field of foods. n CONSTITUTION: The objective dressing is composed of an aqueous phase and an oil phase and contains 5-99.9wt.% (preferably 5-65wt.%) of a diglyceride in the oil phase based on the total oil in the oil phase. The oil phase is compounded with a surfactant selected from a sucrose fatty acid ester, a sorbitan fatty acid ester, a polyglycerol fatty acid ester and a phospholipid. The oil phase contains 0.1-10wt.% of a phospholipid mixture containing phosphatidic acid (salt) and lysophosphatidic acid (salt) in an amount of ≥15wt.% in total based on the total phospholipid. A low-fat separation-type dressing having excellent durability of taste can be prepared by this process. n COPYRIGHT: (C)1992,JPO&Japio
