titleOfInvention Processed egg powder and preparation thereof
abstract PURPOSE: To provide processed egg powder having a texture like the yolk of hard boiled egg by preparing the aggregate of spherical yolk-containing water-insoluble dry egg particles. n CONSTITUTION: The processed egg powder (water content: usually 3-5%; average particle diameter: usually 5-200μm, preferably 20-150μm) comprises the aggregate of thermally denatured water-insoluble dry yolk powder, dry all egg powder (yolk: ≥50%). The homogeneous mixture of the processed egg powder with approximately the same weight amount-three times weight amount of water gives a texture not at all soggy. The processed egg powder is prepared by spray-drying a yolk-containing egg liquid in an air stream of 130-200°C and subsequently exposing the dried product to a heated steam of 80-120°C for 2sec-5 min to thermally denature the product. n COPYRIGHT: (C)1991,JPO&Japio
