abstract | An apparatus for producing an extract is provided. SOLUTION: (a) a closed ring system 10 capable of holding a fluid that behaves as a gas; (b) a driven machine 15 for circulating the fluid in the closed ring system 10; and (c) provided in the closed ring system and through which the fluid passes. A raw material container 12; (d) a supply device 11 that supplies steam having an extraction temperature below the standard boiling point of the extractant into the closed ring system 10; and (e) a discharge device that discharges at least a gas other than steam from the closed ring system 10. 18 and (f) by monitoring the pressure in the closed ring system 10, gas is discharged to the discharge device 18 until at least the pressure in the closed ring system 10 is equal to or lower than the equilibrium vapor pressure of the extractant at the extraction temperature.
