abstract [Problem] To provide a deterioration inhibitor having an excellent inhibitory effect and high safety against the deterioration of flavor and aroma caused by light, heating or aging of a carotenoid-containing food or drink. [Solution] For light, heating, or time-dependent changes in carotenoids and carotenoid-containing foods and beverages such as β-carotene, lycopene, or astaxanthin, comprising as an active ingredient a product obtained by treating an unfermented tea extract with laccase. The resulting flavor deterioration inhibitor, a flavor composition containing a flavor deterioration inhibitor and a food fragrance, and a carotenoid-containing food or drink containing the fragrance composition.
