abstract | An object of the present invention is to provide a method for producing ornithine and equol and a method for producing a fermented composition containing high concentrations of ornithine and equol. Another object of the present invention is to provide ornithine and equol obtained by the method, and a composition containing these in a high concentration. An attempt was made to culture Adlercreutzia equolifaciens strain DSM 19450 in a medium containing isoflavones and dextrin. As a result, ornithine and equol were able to be obtained at a high concentration in the medium. After the culture solution was filtered, the clear filtrate was dried with a spray dryer to obtain a powder of the fermentation composition. As a result of analysis, this powder contained equol 5.0% by weight, ornithine 11.8% by weight, and citrulline 1.69% by weight. [Selection figure] None |
