abstract |
[PROBLEMS] To increase the amount of isoflavones added in a medium compared to the prior art using a single strain, greatly increase the production of equol, and to easily recover the produced equol. Provided is a method for producing equol, the yield of which is greatly increased compared to the conventional method. [Solution] β-cyclodextrin, β-cyclodextrin derivative or γ-cyclodextrin is added to a medium containing isoflavones, and a kind of obligate anaerobic microorganism having an equol-producing ability is allowed to act.
